Both starchy & non-starchy vegetables have health benefits, but starchy vegetables should be eaten in moderation as they will have more of an effect on your blood sugars. They are an excellent source of antioxidants, (substances that protect the body by neutralizing free radicals which can damage cells) as well as phytochemicals (the bioactive compounds that give them their color and flavor and provide many health benefits associate with eating vegetables).
